Jane’s Fresh Salsa
1 c. onion (minced)
2 large tomatoes (chopped after scooping out seeds and juice)
1 clove garlic (minced)
½ jalapeño (minced, no seeds)
1 sweet banana pepper (optional)
2 T. fresh cilantro (chopped)
2 T. fresh parsley (chopped)
Juice from ½ lime
Salt and fresh ground pepper to taste
Mix and ready to eat. Cover and store up to three days in refrigerator.
