Apple “Pie Tin” Coffeecake

2 eggs                               
1 c. sugar                          
1 c. flour                          
2 t. baking powder
1 t. vanilla
2 c. chopped apples

Mix all ingredients together; put in sprayed pie tin. Lightly sprinkle top with cinnamon and sugar if desired. Bake at 350º for 35 minutes.
