Beef & Broccoli Stir Fry
4 c. cooked rice
1 T. vegetable oil
1 lb. boneless beef cubes
8 oz. fresh sliced mushrooms
3 c. steamed broccoli
2 T. soy sauce
2 T. lemon juice
2 t. cornstarch
1 T. chopped pimento
In a large skillet, heat vegetable oil. Cook beef cubes until done. Add mushrooms and broccoli. Sauté with beef cubes for 10 minutes or until broccoli is tender. In a small bowl, combine soy sauce, lemon juice and cornstarch until smooth. Add this mixture to beef vegetable mixture. Cook on medium heat until thickened. Fold in pimentos. Serve over hot cooked rice.
