Big Crowd Chili
(About 15 quarts)
5-6 lbs. hamburger
1 pkg. celery stalks (about 10 stalks)
2 large onions
1 large green pepper
3 tall cans tomato juice
1 large (6 lb. 8 oz.) can stewed tomatoes
1 large (6 lb. 15 oz.) can Mexican style chili beans
1 pkg. (1.25 oz.) chili seasoning mix
2 T. chili powder
2 T. cumin
1 T. black pepper
1 T. salt
Brown hamburger and drain. Dice celery, onions and peppers. Sauté in butter until tender, add salt and pepper. Put drained meat and sautéed vegetables in large stock pot. Add juice, tomatoes, beans and spices. Simmer on low heat so beans don’t stick.
