Cappuccino Muffins
Mix:
2 c. flour
3/4 c. sugar
2½ t. baking powder
½ t. salt
1 t. cinnamon
In another bowl, stir:
2 T. instant coffee into 1 c. milk until dissolved.
½ c. butter (melted)
1 egg
1 t. vanilla
Mix well. Stir into the dry ingredients just until moistened. Fold in ¾ c. mini chocolate chips. Fill greased muffin tins 2/3 full. Bake at 375° for 18 to 20 minutes. Cool.
You can serve with the following coffee cream cheese spread.
8 oz. cream cheese (softened)
2 T. sugar
2 t. instant coffee
½ t. vanilla
½ c. mini chocolate chips
Combine ingredients and beat well. Refrigerate. Cut muffins in half and spread generously with filling.
