Cheesy Potato Soup
(quick and easy!)
6 potatoes, diced
2 carrots, diced
onion, diced
4 chicken boullion cubes
2 tablespoons parsley
1 can cream of mushroom soup
2 inch chunk of Velveeta cheese
Put potatoes, carrots onion boullion cubes and parsley in 4 cups of water and let simmer until vegetables are done. Add cream of chicken soup and Velveeta cheese and stir until melted. Let simmer but do not boil.
