Chicken Chalupas
3-4 boneless, skinless chicken breasts
2 c. sour cream
2 c. cheddar cheese
2 c. Monteray Jack cheese
1 bunch chopped scallions
1 can mushrooms
1 can cream of chicken soup
10 tortilla shells (large size)
Boil chicken breasts till cooked, drain liquid. Chop chicken in small bite-size pieces. Mix other ingredients and set aside half of the mixture to spread on top. In the remaining half, add the chopped chicken. Spoon chicken mixture into tortilla shell. Roll up and place seam side down in greased 9X13 pan. Spread the set aside mixture on top of shells. Sprinkle with additional cheddar cheese if desired. Bake at 350 degrees for approx. 20 minutes or until cheese is melted. Serve with chips and salsa.
