Cranberry-Orange Sweet Potatoes
2 pkgs. (12-oz each) frozen candied sweet potatoes – Mrs. Paul’s
1 c. whole berry cranberry sauce
1 small orange (sliced, seeded and quartered)
¼ c. orange juice
2 T. butter or margarine
1. In a 3 qt. pan, combine candied sauce mix from sweet potatoes, the cranberry sauce, orange juice and butter over medium heat. Heat until boiling and stir often.
2. Add sweet potatoes; return to boiling. Reduce heat to low, cover and simmer 25 minutes or until sweet potatoes are tender, stirring occasionally.
Makes about 3 ½ c. or 7 servings
