Delicious Salsa
3 quarts tomatoes (chopped and peeled with seeds removed)
3 c. chopped celery
2 c. chopped onions
1 c. chopped green peppers
¼ c. salt
1 c. sugar
¼ c. brown sugar
½ t. cumin
1½ t. mixed pickling spices (tied in cloth)
1 c. white vinegar
Combine all ingredients and let stand overnight in large kettle. Bring to a boil, reduce heat and simmer 15 minutes. Remove spice bag and ladle into hot jars. Seal and process in boiling water bath for 10 minutes.
Makes 5½ pints.
