Flax Seed Muffins
¾ c. whole wheat flour
½ c. Splenda
2/3 c. skim milk
¾ c. plus 2 T. ground flax seed
½ c. instant oatmeal
1 c. unsweetened applesauce
1 egg
½ c. graham cracker crumbs
½ t. salt
1 t. baking soda
1 t. baking powder
1 t. cinnamon
1 t. vanilla
Mix all ingredients together, divide between 14 paper-lined muffin cups. Bake at 400º for 18 minutes.
