Honolulu Chicken
8 chicken breasts
½ t. pepper
½ t. salt
¼ c. flour
1½ c. peach preserves
½ c. BBQ sauce (honey)
½ c. onion (diced)
2 T. soy sauce
1 large pepper (sliced)
Combine flour, pepper and salt in bowl. Cook chicken with seasoned flour and brown in small amount of oil. Put in greased 9 X 13 pan. Combine preserves, BBQ sauce, soy sauce and onion. Pour over chicken and layer on green peppers. Bake at 375º for 1 hour and 20 minutes.
Serve on a bed of wild rice.
