40 lbs. cooked pork
1/2 c. salt
5 boxes of pearl barley, cooked
8 heads of garlic, cut-up
8 c. onion chunks
2 boxes poultry seasoning
6 loaves dried bread
1/2 c. black pepper
Grind cooked pork, bread, onion and garlic together. Add cooked barley, poultry seasoning, salt and pepper. Stuff into casings. Punch several holes in each ring with a needle. Cook in boiling water until rings float to cook the casings. This is a large recipe and makes many rings of Jiternice.
