Kartoffel Salat (German Potato Salad)
This recipe from my grandmother has become a tradition during the holidays. My husband's family loves it so much, that they have started requesting it. My husband was really excited because he got to make it last Easter. It also makes a great potluck dish at a summer picnic!
The amount of potatoes used for this tangy hot potato salad will determine the number of servings.
12 slices bacon (diced and fried until crisp, reserving 6 T. drippings)
3 med. onions (chopped)
1 c. plus 2 T. cider vinegar
1½ T. sugar
1½ t. salt
3/4 t. accent
1/4 t. pepper
2 to 4 lbs. potatoes (cooked, peeled, and cut in 1/4 inch slices)
Parsley (optional)
Mix all ingredients together and enjoy!
