Lemon Cheesecake (salad or dessert)
4 small boxes of sugar-free lemon Jello
1 regular size can crushed pineapple
(drained-keep juice)
2 pkgs. of fat-free cream cheese
1 carton lite or fat-free Cool Whip
Boil 2 cups of water in glass bowl in microwave (at least 2 quart size). Add Jello and stir well with whisk. Add the pineapple juice and several ice cubes. Stir constantly until Jello cools and begins to thicken. Remove unmelted ice cubes. Add the cream cheese and mix with an electric mixer until mixture is smooth and frothy. Fold in drained pineapple and Cool Whip. Pour into cake pan and chill.
