| Mongolian Beef
Serves 4
1 lb. Sliced flat iron steaks
(Freeze your steaks before slicing them and it will be easier to make thin slices, cutting across the grain)
1 small sliced yellow onion
6 chopped green onions
4 c. prepared white rice
3 T. sugar
1 c. soy sauce
1/2 c. canola oil
1 t. black pepper
1 T. kosher salt
You will need an extremely hot pan to make this properly. I like to use my turkey fryer burner to heat my wok outside. (This way when the meat flames up, by the way you want this to happen, there is less risk involved.)
Oven mitts on both hands and a long spoon or tongs would be a good idea.
Make sure to have all your ingredients at hand as this cooks very quickly.
1. Place clean dry pan on flame and let it heat up on high heat for a good ten minutes.
(The pan will turn a little white when it is ready)
2. In a separate bowl mix the beef and oil together.
3. Dump the beef and oil into the pan and start to stir constantly.
4. After a minute of stirring add sugar, soy sauce and yellow onions.
5. Continue stirring until meat is cooked through.
6. Add green onions and serve over rice.
