Orange-Coconut Muffins
1/3 c. orange juice
¼ c. melted butter
1 egg
1½ c. flour
¼ c. sugar
1½ t. baking powder
½ t. baking soda
½ t. salt
1 (11 oz.) can mandarin oranges (drained)
Topping
1/3 c. coconut
¼ c. sugar
1 T. butter
½ t. grated orange peel
Heat oven to 375°.Combine orange juice, ¼ c. melted butter and egg in a large bowl. Beat. Combine all dry ingredients and add to orange juice mixture. Blend. Stir until moistened. Gently stir in oranges. Spoon batter into 12 paper lined or greased muffin cups. Combine topping ingredients in a small bowl: sprinkle evenly over muffins. Bake 19-23 minutes. Let rest 5 minutes. Remove from pan.
