Potato Stir-Fry
Weight Watchers-3 pts per serving, recipe is 2 servings
1 whole potato, cut into 1” squares
½ c. corn
1 c. green beans
1 c. sliced mushrooms
1 c. bell peppers (any color)
Soy sauce
Olive oil
Boil potato squares until soft. While potatoes are boiling, sauté mushrooms & peppers in 1 T olive oil. Add corn and boiled potatoes. Stir in soy sauce, salt & pepper to tast.
Stir fry is versatile recipe using all veggies. Works great when you need to clean out the fridge.
