| Rhubarb Bread
1 1/2 c. brown sugar
1/3 c. canola oil
1/3 c. vanilla yogurt, non-fat
1 egg
1 c. buttermilk or sour milk
1 t. salt
1 t. baking soda
1 tsp. vanilla
2 1/2 c. flour
2 c. diced rhubarb
1/2 c. chopped nuts, optional
Combine all ingredients. Pour into 2 greased loaf pans. Combine the following and sprinkle over with topping.
Topping:
1/2 c. sugar
1/2 c. cinnamon
1 T. melted butter
Bake 40 to 45 minutes at 350 degrees. |
