Rhubarb Cake
Mix together:
1/2 c margarine
1 1/2 c b. sugar
1/4 c. white sugar
1 egg
1 c. buttermilk w/ 1 t. b. soda in it
1 t. vanilla
2 c. sifted flour
1 t. b. powder
1/2 t. salt
Add: 3 cups diced rhubarb. Pour into greased and floured 9 x 13 pan. Combine topping ingredients and sprinkle over cake. Bake 40 min. or until done at 350 degrees.
Topping:
1/2 c. brown sugar
1/2 t. cinnamon
Optional: 1/2 c. chopped nuts and 1/2 c. coconut
