| Rhubarb Coffee Cake
1 1/2 c. brown sugar
2/3 c. oil
1 egg
1 t. vanilla
Add 1 c. buttermilk or sour milk
Mix:
2 1/2 c. flour
1 t. salt
1 t. baking soda
1 t. cinnamon
Add:
1/2 c. nuts
1 1/2 c. rhubarb finely chopped
Bake in a 9X13 pan at 350 degrees for 40-45 minutes or until done when tested with a toothpick.
