Spinach & Berries Salad
(with Non-Fat Curry Dressing)
6 oz. fresh spinach, torn in bite-sized pieces
1 c. thickly sliced strawberries
1 c. blueberries
1 small red onion, thinly sliced, pulled into rings
1/2 c. chopped pecans
Not-Fat Curry Dressing
2 T. balsamic vinegar
2 T. rice vinegar
4 t. honey
1 t. curry powder
2 t. Dijon mustard
Salt, pepper to taste
Wash and dry spinach. Whip together dressing. Add to spinach and toss lightly. Add berries, onion and pecans. Toss lightly.
Makes 6 servings.
