Sweet Potato Nut Soufflé
3 c. mashed sweet potatoes (cooked)
1/2 c. white sugar
2 eggs
1/2 c. margarine
1 t. vanilla
1/2 t. salt
Beat eggs. Add rest of ingredients and potatoes and pour into 2 qt. casserole dish.
Topping:
1 c. brown sugar
1/3 c. flour
1/3 c. margarine
1 c. chopped pecans
Mix until crumbled and spread over potatoes. Bake 350º for 25-30 minutes.
