Turkey & Jack Cheese Chimichangas
Weight Watchers Recipe-5 pts per burrito
½ lb. ground turkey (uncooked)
16 oz. fat-free refried beans
1 ¾ c. salsa
4½ oz. can green chili peppers, mild
1 tsp chili powder
3 T scallions, thinly sliced
1 c. shredded reduced-fat Monterey Jack cheese
8 large burrito size wheat flour tortillas
Topping: 1 c. salsa & ½ c. fat-free sour cream
Preheat oven to 350°. Coat a 13x9x2 inch baking dish with cooking spray.
Brown turkey in skillet over medium heat. Add beans, salsa, chili peppers, chili powder and scallions. Cook until heated through, about 3 minutes; stir in cheese. Heat tortillas slightly in microwave so they fold & roll easier. Spoon ½ c. of turkey mixture onto each tortilla; fold in sides and roll up. Place in baking dish. Bake uncovered until tortillas are crisp and browned, about 20 minutes. Serve each tortilla with 2 T. salsa and 1 T. sour cream.
Ground turkey is a great way to cut fat and can be used in many recipes!
